My fiance and I are loving these oatmeal chocolate chip cookies! My last batch was incredibly delicious – and I’m expecting the next dozen (or two) to come out even better. So yummy!
Feel free to vary the amount of oatmeal, depending on whether you are going for a crispy oatmeal chocolate chip cookie, or something more chewy.
Delicious, easy to make and bake Oatmeal Chocolate Chip Cookies. These are a cinch to put together and dont come out too heavy! Bake them soft or crispy!
- Preheat oven to 350º. Spray cookie sheet with nonstick cooking spray or grease very lightly with butter or Crisco.
- In medium bowl, mix together flour, baking soda and salt. Cream together butter and sugar. Add eggs to the butter and sugar mixture. Add flour and other dry ingredients. Stir in oats and chocolate chips until fully mixed. Drop by heaping tablespoons onto the cookie sheet. Bake in oven for 7 minutes. Cool on wire rack.
For an extra kick of sweetness, add 1/4 cup diced coconut to the mixture. If you are a nut person, you can add chopped walnuts or pecans to this recipe for extra crunch. Tasty!
My fiance loves these cookies when I go a little lighter on the oatmeal and bake them crispy, because the oatmeal gives the cookie a robustness that can’t be beat.
