Amanda’s Pumpkin Muffins

My Pumpkin Muffins are delicious during the fall season and are a great breakfast food with your morning coffee as well! This recipe is very basic and easy to follow, so in a few short steps you will have some delicious pumpkin muffins to share with your friends and family. In Finland I’m sure only a few stores carry pumpkin puree, because of the absence of the American holidays Halloween and Thanksgiving, there may not be many options for finding pumpkin. However there is an ethnic foods store in the city center that has a wide range of American products, so I’m certain that Finns could find pumpkin puree there. These sweet and savory pumpkin muffins are so good with a cup of hot coffee or tea, or a cold glass of milk!

If you like your muffins frosted, I think that these would be absolutely wonderful with cream cheese frosting. This would make them extra sweet! This coming fall I am thinking of developing a recipe of cream cheese filled pumpkin muffins where there is cream cheese on the inside too. I’ll keep you updated! Sweet and Savory Pumpkin Muffins

These pumpkin muffins are a delicious way to enjoy a classic fall ingredient anytime of the year! Pumpkin muffins pair well with coffee or tea or ice cream.


1 1/2 cups sugar
1/2 cup vegetable oil
2 eggs
1 cup canned pumpkin
1/3 cup water
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
****Optional - You can add 6 ounces of Semi-sweet chocolate chips to this mixture if you’d like chocolate chip pumpkin muffins!


  1. Preheat oven to 350°F. Add paper muffin cups or grease muffin pan with Crisco or butter.
  2. Mix sugar and oil in a small bowl. Mix in eggs, pumpkin, and water and blend. Combine the remaining ingredients. Add chocolate chips if desired.
  3. Bake for 30 minutes, until golden brown on top and an inserted toothpick comes out clean.
