Curry Quinoa with Veggies Recipe

This curry quinoa with veggies recipe is a whole grain dish which includes delicious quinoa and vegetables. Great combination of broccoli, carrots, corn, and onion. Added some Indian spices for some extra flavor! Turmeric, Curry powder, and Chili Powder all add a wonderful kick of flavor. I’d be careful to taste the quinoa as you are adding the spices so that you don’t make it too spicy for your preferences. If your palate can handle Indian cuisine very well, by all means you can definitely add more curry to this dish.

I’ll admit that I’m not actually a huge quinoa fan, so the reason I made this dish was because I wanted to find a way to make a quinoa dish that I could enjoy. Since I really like Indian cuisine, I thought I’d try my hand at Indian Quinoa! It didn’t turn out half bad. I’d serve this with a side of Naan. Another idea for this dish would be to add some chickpeas or lentils to the mix to add another layer of flavors. This is only my second time making quinoa, so I think I’m just getting the hang of this grain. I would love to experiment with it more in the future, as I find it an incredibly versatile grain to work with in cooking, similar to rice.

This curry quinoa with veggies recipe is also great because it can be served both hot or cold. I think this dish would pair well with a side of chicken or pork. This dish is also completely vegan for all my vegan friends out there!

Curry Quinoa with Veggies Recipe

This healthy curry quinoa and veggies dish is a wonderful combination of whole grains and Indian spices. This dish is also vegan!


2 cups Quinoa
15 baby carrots, sliced
1/2 onion, diced
1 cup frozen corn
1 broccoli floret, chopped
1 teaspoon curry powder
1 teaspoon turmeric
1/2 teaspoon chili powder
1 teaspoon salt
Pepper to taste
Onion and Garlic Powder


  1. Rinse quinoa thoroughly with warm water before cooking. Strain.
  2. In a large pan, begin boiling water and cook quinoa for around 15 minutes until fluffy and done.
  3. Chop onion, carrots, and broccoli.
  4. In a medium saucepan, add veggies and 1/2 cup water and begin to cook. Veggies should soften in around 7 minutes of cooking.
  5. Add spices to cooked quinoa.
  6. Add veggies to quinoa.
  7. Fluff quinoa and serve in a small bowl, or as a side dish to another dish!


This recipe is a great way to add some extra spice to quinoa. If you love Indian Spices and fresh ingredients, this is a dish you will truly enjoy!
