This cheesy potato casserole is the definition of yum yum yum!
Ingredients
2 pounds diced frozen hash browns
1/2 cup butter
1 can cream of chicken soup
1 cup sour cream (you may use the light version if you prefer)
1 cup shredded cheddar cheese
1/4 cup diced onion
Salt, pepper, and paprika on top to taste
You can also top with croutons for extra crunch.
Directions
- Preheat oven to 350 degrees
- Defrost potatoes
- Melt Butter in microwave
- Dice onion
- Add all other ingredients in a casserole dish and bake for one hour.
- Top with croutons if desired.
You can use a variety of cheeses besides cheddar if you prefer. I would think Parmesan, Monterey Jack, and Swiss would be other mild varieties to try.
