Chicken Marinade Recipes
Baked chicken is a staple dinner item in our house. But let’s face it, eating chicken night after night, or week after week, can get boring real quick. Finding new and interesting ways to marinate chicken is no easy task, let me tell you! Once you’ve done Barbecue Chicken, Oriental Chicken, Indian Curry Chicken, and the Parmesan Italian Chicken, you feel like you have exhausted all the options. However, all hope is not lost!
The best part about marinating chicken is the versatility. Get creative with what herbs, spices, and flavors in which you marinate your chicken. Try new things.
Here are a few new and interesting ways to Marinate Chicken:
Lemon-Olive oil- Rosemary Chicken Marinade: 4 tablespoons lemon juice, 4 tablespoons olive oil, 4-5 sprigs of rosemary.
Garlic and White Wine Chicken: Marinate thin strips of chicken in minced/mashed garlic and olive oil for 4 hours. Sautee the chicken in white wine until done. Add some flour to the extra juice and you’ll have a lovely sauce to drizzle on top of the chicken!
Pineapple chicken: ½ cup Pineapple juice, 4 tablespoons Italian Dressing, Salt and Pepper
Chicken with Peanut and Ginger: ½ Cup Orange Juice, ½ cup peanut butter, 2 Tablespoons dark brown sugar, 2 teaspoons ginger, ¼ cup soy sauce, 1 teaspoon red pepper flakes
Mustard Balsamic Chicken Marinade: 2 tablespoons mustard, 2 tablespoons balsamic vinegar, 3 tablespoons lemon juice, 2 cloves minced garlic, 1 teaspoon paprika
Buttermilk Herb Marinade: 1 cup buttermilk, 1 tablespoon Dijon mustard, 1 tablespoon honey, 1 tablespoon finely chopped fresh rosemary, 1/2 teaspoon dried thyme, 1/2 teaspoon dried sage, 1 teaspoon salt, 1/2 teaspoon fresh ground black pepper
Thai Chicken Marinade: 1 Small can light coconut milk (10-12 oz), 1 tablespoon light brown sugar, 2 tablespoons red curry paste (found at whole foods), 1 teaspoon fresh lime zest
