Oatmeal Chocolate Chip Loaf Cake Recipe

This Oatmeal Chocolate Chip Loaf cake cooks up quick, and is moist and tasty. Uses whole grain oats, so it packs a healthy kick!


1 cup Brown Sugar
1 Stick butter, softened (1/2 cup)
1 teaspoon baking powder
1 teaspoon baking soda
3 eggs (at room temperature)
1 cup all-purpose flour
1 cup oats (quick, or non-quick work fine)
1/2 cup semisweet chocolate chips
1 teaspoon vanilla extract
1 cup milk


  1. Preheat oven to 375 degrees.
  2. Lightly grease a loaf pan with butter or crisco.
  3. In a mixing bowl combine the softened butter with the brown sugar until it is creamed.
  4. Add eggs one at a time, mixing until combined.
  5. Add baking soda, baking powder, and vanilla extract.
  6. Add 1/2 the oats mixture and 1/2 the milk.
  7. Add the flour.
  8. Add the remaining oats and milk and mix well on medium speed.
  9. Lastly, add the chocolate chips and mix only a few times until they are combines evenly throughout.
  10. Bake loaf for 25-30 minutes until brown and firm on top, and a knife comes out of the center clean.


You can substitute whole grain wheat flour for the all purpose flour if you would like an even more whole grain loaf.
