Graham Cracker Pound Cake Recipe

This Graham Cracker Pound Cake recipe is a wonderful new addition to your standard pound cake repertoire.  Graham Cracker Pound cake is very easy to make- all you need is a normal loaf sized pan (similar to the kind used for other pound cakes), and all the ingredients.  You can even mix it by hand if you want- it’s so easy!

Graham crackers are one of my favorite types of crackers, especially with milk- but sometimes if you have purchased too many then you need to find a reason to use them all! This is the perfect cake to make!

Graham Cracker Pound Cake Recipe


Vegetable oil cooking spray
1 1/2 sticks unsalted butter, softened
1/2 cup granulated sugar
1/4 cup dark brown sugar
1 1/2 cups cake flour
1/2 cup finely ground graham cracker crumbs (grind up about 20 graham crackers in a food processor)
3/4 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons milk
2 tablespoons heavy cream
3 large eggs, at room temperature
1 tablespoon vanilla extract


  1. Preheat oven to 325 degrees.
  2. Spray loaf pan with the cooking spray so that the cake will not stick.
  3. In a mixing bowl (by hand or using an electric mixer) combine the butter and sugars until they are creamed together.
  4. Add salt, baking powder, eggs, and vanilla extract. Mix well.
  5. Combine the graham cracker crumb flour and the cake flour in one bowl.
  6. Add half the milk/cream mixture to the mixing bowl where the other wet ingredients are.
  7. Add half the cake flour/graham cracker crumbs combination to the mix.
  8. Add the other halves of each wet/dry ingredients to the mix and mix well.
  9. At this point you should reach a smooth consistency.
  10. Spoon/pour the batter into the loaf pan.
  11. Bake for 55 minutes at 325 or until a toothpick comes out clean.
  12. Serve with milk!
  13. *This cake is also wonderful if you want to add a little cinnamon/butter glaze to the top after baking, or you can sprinkle additional graham cracker crumbs on top as well.
