Prep Time: 15 minutes

Cook Time: 14 minutes

Total Time: 29 minutes

Yield: approximately 2 dozen cookies

Serving Size: All you can eat.

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
8 ounces chocolate chips (1/2 cup will be melted and added to batter, other 1/2 cup will be mixed in whole chips)
1 stick unsalted butter (softened)
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract

  1. Preheat oven to 325 degrees.
  2. Line two baking sheets with silpats or parchment paper. (or lightly grease with butter)
  3. In a mixer cream together butter and sugar on medium speed.
  4. Add vanilla extract and eggs until well combined.
  5. Melt 1/2 cup chocolate chips in the microwave in a microwave safe dish (approximately 1.5 minutes)
  6. Add the melted chocolate chips to the batter and mix.
  7. In a mixing bowl combine cocoa powder, flour, salt, and baking soda, use a whisk to make sure the cocoa powder lumps have been eliminated.
  8. Add flour/cocoa powder mixture to the batter.
  9. Add remaining 1/2 cup of chocolate chips and stir gently with a spoon only until they are mixed in.(for an extra chocolatey cookie, I add 3/4 cup chocolate chips)
  10. Use an ice cream scoop to spoon balls of cookie dough onto baking sheets.
  11. Bake for 12-14 minutes or until the tops of the cookies begin to crack slightly.
  12. Remove from oven.
  13. After cooling for one minute on the cookie sheet, remove immediately to a cooling wrack by using a spatula.
  14. *Note that this cookie will firm up more when it cools, so it's important to be gentle with the cookie when it is still warm, as it may break! But when the cookie cools and firms it will hold its form well and it's delicious!

This recipe can be spiced up by adding nuts in at the same time you add the chocolate chips- I'd recommend either walnuts or Macadamia Nuts. Alternatively you can also add white chocolate chips in if that is your preference!

Yes if you scoop the cookie with an ice cream scoop onto a tray it will spread out. If you don’t have a cookie sheet you can also use a lightly greased tray. The cookies have a lot of butter in them, so it’s not really necessary to even grease the tray if you don’t want to. Best of luck!
