Lemon Zest Cookies Recipe

These lemon zest cookies are light and sweet-perfect for summer!


1⁄2 cup butter, softened
1 cup granulated sugar
1⁄2 teaspoon vanilla extract
1 egg
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
1⁄4 teaspoon salt
1⁄4 teaspoon baking powder
1⁄4 teaspoon baking soda
1 1⁄2 cups all-purpose flour
1⁄2 cup powdered sugar (for dipping cookies and sprinkling after baking)


  1. Preheat oven to 350 degrees.
  2. In a mixer cream together the butter and sugar until creamy.
  3. Add Vanilla extract and egg.
  4. Zest 1 whole lemon and add the zest to the mix.
  5. Add salt, lemon juice, baking soda, baking powder.
  6. Add flour a little at a time until dough thickens.
  7. Scrape down sides of bowl and mix a final few rounds.
  8. Form dough into small balls.
  9. Roll balls in powdered sugar and place on a lightly greased baking pan.
  10. Bake for 11 minutes, checking occasionally- do not overbake or these will turn hard very fast!
  11. Cool for 3 minutes on baking pan then promptly move to a cooling rack until fully cool.
  12. Using a flour sifter, sift powdered sugar on top of the cookies.
  13. Serve and enjoy!
